Classic English Scones 英式司康

INGREDIENTS

110 g all purpose flour

30 g sugar

4 g baking powder

35 g soft salted butter

1/2 egg

18 g milk

1 egg yolk (for glazing)


INSTRUCTIONS

  1. Preheat the oven to 175°C

  2. In a large bowl, whisk together flour, sugar and baking powder

  3. Cut the butter roughly into small cubes

  4. Rub in butter with your fingers until the mixture resembles fine breadcrumbs

  5. Create a small well in the center of the mixture, add in 1/2 egg, mix

  6. Add milk to the mixture gradually until the mixture forms a dough (note: the dough shouldn't be too dry or too wet - it shouldn't stick to your hands)

  7. Transfer the dough onto a floured counter

  8. Form the dough into a disk and roll out to about 1" thick (note: do not overwork on your dough, otherwise the dough might be tightened)

  9. Cut out scones with a 2" round cookie cutter and place on a non-stick baking tray

  10. Glaze the tops with beaten egg yolk

  11. Bake for 15 - 20 mins

  12. Done!

材料 110克 中筋麵粉 30克 糖 4克 泡打粉 35克 有鹽軟牛油 1/2 雞蛋 18克 牛奶 1 蛋黃(用於刷色) 做法步驟

  1. 將焗爐預熱到175°C

  2. 在一個大碗中,把麵粉,糖和發酵粉混合均勻

  3. 把牛油大致切成小方塊

  4. 用指腹把牛油和麵粉混合 搓到像麵包糠般鬆散的的狀態

  5. 麵粉中間挖出一個窩,加入1/2打散的雞蛋,混合

  6. 慢慢分次加入牛奶,直到麵團形成(注意:麵團不應太乾或太濕-不應粘在手上)

  7. 將麵團轉至灑上麵粉的桌上

  8. 將麵團捏壓成圓盤狀,桿成約1寸厚(注意:不要過度搓揉麵團,否則麵團會起筋)

  9. 用2寸圓形模具切出約 4 - 5 份司康麵糰,放在不粘烤盤上

  10. 於表面刷上一層蛋黃液

  11. 焗15-20分鐘至表面呈現金黃色即可

  12. 完成!
