INGREDIENTS
110 g all purpose flour
30 g sugar
4 g baking powder
35 g soft salted butter
1/2 egg
18 g milk
1 egg yolk (for glazing)
INSTRUCTIONS
Preheat the oven to 175°C
In a large bowl, whisk together flour, sugar and baking powder
Cut the butter roughly into small cubes
Rub in butter with your fingers until the mixture resembles fine breadcrumbs
Create a small well in the center of the mixture, add in 1/2 egg, mix
Add milk to the mixture gradually until the mixture forms a dough (note: the dough shouldn't be too dry or too wet - it shouldn't stick to your hands)
Transfer the dough onto a floured counter
Form the dough into a disk and roll out to about 1" thick (note: do not overwork on your dough, otherwise the dough might be tightened)
Cut out scones with a 2" round cookie cutter and place on a non-stick baking tray
Glaze the tops with beaten egg yolk
Bake for 15 - 20 mins

材料 110克 中筋麵粉 30克 糖 4克 泡打粉 35克 有鹽軟牛油 1/2 雞蛋 18克 牛奶 1 蛋黃(用於刷色) 做法步驟
將焗爐預熱到175°C
在一個大碗中,把麵粉,糖和發酵粉混合均勻
把牛油大致切成小方塊
用指腹把牛油和麵粉混合 搓到像麵包糠般鬆散的的狀態
麵粉中間挖出一個窩,加入1/2打散的雞蛋,混合
慢慢分次加入牛奶,直到麵團形成(注意:麵團不應太乾或太濕-不應粘在手上)
將麵團轉至灑上麵粉的桌上
將麵團捏壓成圓盤狀,桿成約1寸厚(注意:不要過度搓揉麵團,否則麵團會起筋)
用2寸圓形模具切出約 4 - 5 份司康麵糰,放在不粘烤盤上
於表面刷上一層蛋黃液
焗15-20分鐘至表面呈現金黃色即可
完成!
